The list of apps are sorted by the amount of space they consume on your phone. The apps that consume the most space are at the top of this list. Look for the iOS version that has been downloaded to your device and tap it.
Tap it to remove the update from your phone. Removing an update will not prevent iOS from automatically downloading it again. On that note, it might be a good idea to remove a downloaded update to keep yourself from accidentally updating to the next version of iOS.
You might be able to downgrade through a hack of some sort but the hack will have its risks.
